There are quite a few free wiki hosters about , this route is far simpler
than actually installing the code your self .

try swiki.net ( make sure you untick the formmating option on each page )

I've pointed people there in the past who didn't know how to do websites
or wikis and they got the hang of it very quickly . It's not up to wikipedia grade
but it is free and you get usefull addresses like http://user.swiki.net/ .

There are lots of different wiki syntaxes around and there doesn't seem to be
much standardisation so you might as well just dive in and play without 
worrying to much about which is best , IMHO.
