Hi Keith

This might sound pedantic but you are not comparing like with like here.

If you use gmail's web interface, it will show you the date and IP from
which it was last accessed. This is the same with many other webmail
interfaces, e.g. horde, roundcube, squirrelmail, regardless of who runs
them.

If you access any email (including gmail) using a mail user agent such
as thunderbird (or any other, closed or open source) you won't be told
about the last access because that's not part of the protocol used to
send & receive your mail.
